Sophia is definitely saying bye bye (usually accompanied with wave and sometimes you get a kiss too), though not always in response to you saying bye to her - it's more pavlovian tied to picking up a bag with a handle, as if "now i have my handbag so that means I am leaving."

and she acquired a kuh/guh noise because she's discovered toy cars and is trying to say car.
